1 pkg. Spanish Rice Mix
1 can diced tomatoes
1 can black beans, drained
1 lb. ground beef
1 pkg. Taco seasoning
20 flour tortillas
4-5 small cans red Enchilada sauce
3-4 cups shredded cheddar cheese

In a frying pan, cook Spanish Rice following the box directions. In a separate large cooking pot, brown ground beef and drain. Add taco seasoning and water to the ground beef following the directions on the seasoning pouch. In large pot, combine beef mixture, Spanish rice mixture, and black beans. To make Enchiladas, place about 3 Tbsp. of mixture, 1 Tbsp of Enchilada sauce, and 1 Tbsp cheese in each tortilla. Roll and place in greased 10” x 13” casserole dishes. Top with remaining Enchilada sauce and cheese. Bake at 350 degrees for 25 minutes or until heated through.
